Phillips Square, Montreal
Frank Giammaria is an MHA member who I met at our 2006 pizza oven build and pizza party, in North Carolina.
He owns Pizza Il Focolaio, at 1223 Phillips Square.
It is right downtown, across from the Hudson's Bay Company main store. On the other side of the square is the historic
Canada Cement Company Building.
Frank has been making wood fired pizzas at this location for 23 years.
I stopped in at lunchtime on a recent trip to Montreal. The place was buzzing.
Frank has 2 ovens. This one is in the kitchen.
This one is out front.
All of the cooking in the restaurant is done in these two ovens.
Frank is very careful about his ingredients. He uses organic milk in his crust, for example.
Frank invited my wife and I to come back for supper. We brought some colleagues, who were attending the Blue Metropolis Festival.
Montreal is known as "Festival City", and is an amazing place in the summer.
There is some pretty good wood fired pizza to be had in Montreal these days.
Frank's is the best.
I love this job !
